Grease resistance is measured on the Kit scale, and it is the only number that matters when you are choosing this paper. A wrap for a dry pastry and a liner for a hot fried product are not the same job. The Kit level is set to your requirement between 5 and 9 rather than fixed by the mill.
Everything else follows food-contact discipline — Cobb held at 28 g/m² or below, and no optical brightening agents, tested to GB 31604.47.
